The Bindery on Blake building in River North will soon be home to a trio of new food and beverage establishments, notably the new location of the Rackhouse Pub (after owner Chris Rippe’s original spot was closed to make way for the expansion of Stranahan’s distillery), and Bierstadt Lagerhaus, a brewery from former Prost brewers Bill Eye and Ashleigh Carter. But the first to open will be C Squared Ciders, headed by Andy Brown, who was most recently the head brewer at the Wynkoop Brewing Company. C Squared is throwing a Fourth of July party at the cider house as a sneak peak of Brown’s line of ciders.
Although C Squared does not have its own tasting room, the ciders will be served at the Rackhouse once it opens later this summer. “We’re production and distribution focused,” explains Brown, so C Squared will primarily be sold in bottles and kegs in bars, restaurants and liquor stores.
The party kicks of on Saturday, July 4 at 7 p.m. and will include music from two DJs and two bands and is Brown’s way of thanking all the friends who helped get C Squared off the ground, but it’s also open to the public.
The company is launching with three ciders in its Siren series: Alma, a semi-sweet cider; Nona, an off-dry style; and Ginger, which is flavored with ginger root. All three of these, plus a few other treats, will be on tap at the party. Brown will also be tapping a different cider every hour during the event, including dry-hopped and oak-aged versions.
The first batches of C Squared ciders are being made with apples from Washington, but Brown says that future batches will include Western slope fruit once Colorado apple season hits in the fall.
“After fifteen years making beer at Wynkoop and Left Hand, I really enjoy bringing some of my beer knowledge to cider production,” Brown says of his new vocation. “Plus, I also have a sweet brewery next door to hang out at and help Bill and Ashleigh if I ever miss brewing.”
After the July 4 launch, private tours and tastings at C Squared will be available appointment.
