Husband-wife cidery delivers small batch, sparkling cider this fall
Just in time for apple season, husband-wife duo, Talia and Daniel Haykin will debut their 1,650-square-foot cider production facility and tasting room to show off their award-winning hard apple cider. The location at 12001 E. 33rd Avenue in Aurora is in the process of being built out. When it is done, it will intimately accommodate between 10 and 12 guests in addition to housing production.
Originally aiming to plant themselves in the belly of the beast – neighborhoods such as RiNo or LoHi – the couple selected their space, dedicating the majority of their budget to a high quality product. Both will continue their day jobs – he is as an investment advisor and she is as a marketing consultant.
Though the space isn’t fully designed yet, Daniel Haykin says guests can expect to feel like they’re walking into a production facility, able to ask and learn about the process behind their product.
Starting Haykin Family Cider out of an appreciation for sparkling wine, Daniel Haykin set out to concoct a similar product with apples in October 2013. The two-some has pressed their own apples from the start, thereby building relationships with local apple growers, including Masoonville Orchards in Fort Collins, Ela Family Farms and Atomic Orchards in Hotchkiss. The adult beverage contains just two ingredients: apples and yeast. The Haykins uniquely bottle their product in 750ml champagne bottles and corks to maintain a high pressure.
And the care and attention to Haykin Family Cider has paid off. This past year, Haykin Family Cider won “First in Class” for their modern sweet esopus spitzenburg cider at the Great Lakes International Cider and Perry Competition, among others.
